There are two great things about Father Jacob’s stews. The first is their nutritional value – they have so many good things a pregnant woman needs! And the second great thing? Well, they just taste amazing!
Father Jacob is an incredible chef all year round, but autumn is his favorite season for cooking. He can now make stews, or so he says… This dish is just one example of his stew-making capabilities. It introduces a unique blend of ingredients and tastes that every pregnant woman needs in her diet while pregnant. It can be prepared with or without chicken, which means the stew is good for both vegetarians and meat eaters.
Note that it is preferable to make this dish with a slow-cooking dish. Still, if you don’t own one, a regular dish will suffice.
Why is it good for a pregnancy diet?
This dish is basically vegetables slow-cooked. This means that the ingredients’ nutritional value won’t be lost as much as with other forms of cooking, such as boiling.
To be more specific about the stew’s nutritional benefits for your diet while pregnant – the potato and sweet potato will provide you with carbohydrates. This will give your body available energy. The sweet potato will also give you a decent amount of vitamin A, which is crucial for your baby’s inner organs proper development (including the heart, lungs, kidneys, and more), Calcium, and antioxidants which are important to healthy growing processes.
The various vegetables in the stew will provide you and your baby with various vitamins and minerals. This includes vitamins from the B group, vitamin C, vitamin E, calcium, potassium, sodium, and more. All of those nutritional ingredients are extremely important for your baby’s proper development since they have a part in building the baby’s immune and neural systems, muscles, inner organs, etc.
If you eat meat, you might want to put some slices of beef or red turkey breast in the stew. It will give you and your baby plenty of B12, iron, and other ingredients which are important for the proper development if your baby and will help you maintain your satiation.
It is also worth mentioning that the stew’s rich flavor and texture is most likely to sooth some culinary cravings you might have, for dishes with strong taste and texture.
Ingredients
(4 servings)
1 Potato
1 Sweet potato
1 Zucchini
3-4 spoons of Soy sauce
A bundle of Basil
1 Bell pepper
1 Tomato or 1 cup of tomato paste
Crushed ginger
Sweet paprika
Salt, pepper and other spices you like
Optional:
1 pound of red turkey or beef, cut into medium-sized pieces
Preparation
If you will be having some poultry in your dish, start from section 1.
If not, begin from section 2.
- With just a bit of oil, fry the poultry until it turns slightly white (this usually takes about 2-3 minutes). Afterwards, take the meat out of the dish, and put it in a bowl for later use.
- Cut all of the vegetables to medium or small-sized pieces.
- Put all the vegetables in the slow cooker (or regular pot if you don’t have one). Pour a bit of water into the dish. The water doesn’t even have to cover the contents of the dish (however, if the dish seems too dry in the process of its making, simply add some water).
- Let the dish slow-cook over a small fire for about 20-30 minutes, and add the soy sauce. If you have meat in your dish, add it now as well.
- Allow the dish to cook over a small fire for a total of 1-1.5 hours before serving. Note that Father Jacob would sometimes cook this dish for up to 3-4 hours, adding water whenever needed to prevent it from getting dry. He says it simply gets better with every passing minute…
