If there is a vegetable which seems to be underrated, it is broccoli. This vegetable is actually one of the healthiest foods available, let alone during pregnancy, and it is can be eaten in any manner – boiled, steamed, fried… In this recipe it will be baked and turned into a delicious pie, alongside mushrooms and cheese.

Why is it good for pregnancy diet?

There are two main reasons for why this pie is great for your pregnancy diet. The first reason is the broccoli. Many nutrition experts refer to broccoli as a “super vegetable”. It is packed with minerals – calcium, magnesium, phosphorus and other. All those minerals are extremely important for keeping your immune system, bones and muscles strong. They give you energy and vitality, and are vital for your baby’s proper development. Broccoli also contains decent amounts of vitamins and folic acids. Those are crucial for the proper function of many of your systems (immune, neurological and more) and a healthy development of your baby’s.

The mushrooms are the second reason for why this pie is what you need for your diet when pregnant. Many pregnant women experience many changes in their skin – acne sores, pregnancy pigmentation, skin dryness or over-moistness, etc. While on most cases such changes are not dangerous, they are aesthetically unpleasant. Mushrooms contain a high portion of potassium. Amongst its many functions and qualities, potassium is important for keeping our skin beautiful and healthy. This is why mushrooms are considered by many nutrition experts and alternative practitioners as a natural remedy for skin changes during pregnancy. And of course, in addition to the vegetables, this pie has a handsome amount of cheese. Most experts would agree that cheese has its benefits for pregnancy diet – it contains high ratios of calcium and other important mineral, such as potassium, magnesium, and zinc (important for the strength of the mother’s bones and teeth, the baby’s proper development, and more). It also has many vitamins, and other needed ingredients by both the pregnant woman and her baby.

Ingredients

About 1.75 pounds (800 grams) of broccoli
1 onion
12-15 mushrooms
Oil
2 cups of cottage cheese
0.2 pounds (100 grams) of grated hard cheese (such as Gouda or cheddar)
4 eggs
3 spoons of rising flour
Salt and pepper

Preparation

It’s almost amusing how easy it is to prepare this amazing pie:

  1. Pre-heat the oven to 350 degrees (180 Celsius) 
  2. Cut the broccoli to small-medium sized pieces. Chop the onion and mushrooms.
  3. Fry the onion, after it turns slightly golden add the mushrooms. Fry for about 2 minutes.
  4. Put all the ingredients in a big bowl. Mix it well.
  5. Grease a shallow baking dish with some oil or butter. Pour the mixture into the dish. Spread it as even as possible. 
  6. Bake for about 50 minutes, or until the pie turn golden. Serve warm or cold, preferably with a salad on the side.

Since this pie is so easy to prepare, healthy and delicious, whenever you ask yourself what to eat when pregnant, you can simply make one. Have it as a part of your meal, or even as a snack every once in a while.
